On PS4/Xbox One, you cannot choose intermediate updates. You will go directly from your current version to the most recent version (which is far beyond 1.41). To stop at exactly 1.41, you would need a physical disc copy of the game released in late 2017, which already contains the 1.41 data on the disc.
For players still operating on version 1.26, the update to 1.41 was a mandatory, title-breaking patch. The procedure was as follows:
Added a "GTA Online Vehicles" category to the Key Rebinding menu and unique key bindings for special vehicle controls.
: Run the installer included in the update package or manually copy the contents of the Update folder into your main GTA V directory.
: Increased the amount of explosive damage the Savage can withstand. Cumulative Content Between 1.26 and 1.41
